1 pound Owl Creek Bison ground bison
1 T olive oil
1/4 cup finely minced onion
2 t. minced fresh ginger
3 cloves garlic, minced
2 T soy sauce
2 T sweet chili sauce
2 t sesame oil
1/3 cup cilantro, finely chopped
1 egg, beaten
1/3 cup bread crumbs
Preheat oven to 400 °. Saute onion, garlic, and ginger in olive oil until soft. Cool. Mix rest of ingredients together and then add the onion mixture. Shape into balls (I like to make them ¾ to 1 inch in diameter for lettuce wraps). Place on baking sheet and bake until pink is gone, about 10 minutes for 1 inch size meat balls, a bit longer for larger ones.
Serve with rice and sweet chili sauce or as a lettuce wrap.
