1 pound Owl Creek Bison ground bison
1 T olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
1 T ground cumin
1 T chili powder
1/4 t oregano
1/2 t paprika
1 t crushed red pepper (optional)
1/2 t salt
1/4 t pepper
Saute onion in olive oil until translucent, but not brown. Add garlic and saute for 30 seconds. Add the rest of the spices and cook for 1-2 minutes until fragrant. Add bison, salt, and pepper, and cook until pink is gone. Taste and add more salt if desired.
Serve with corn or flour tortillas and your favorite toppings.
